Creamy Spiced Spinach

Ingredients:
- 1 1/2 tablespoons extra-virgin olive oil
- 1/4 teaspoon (or more) crushed red pepper
- 5 chopped garlic cloves
- 1/2 bunch chopped sping onions*
- 3/4 teaspoon curry powder
- 500g fresh spinach*
- 125ml plain non-dairy yogurt OR whole-milk Greek yogurt
- 1/4 teaspoon kosher salt

Directions
Cook extra-virgin olive oil, crushed red pepper, and garlic cloves in a large skillet over medium-high until garlic begins to sizzle, about 2 minutes. Add spring onions and curry powder; cook 2 minutes. Add fresh spinach from your Tower Garden to the pan in batches, stirring until wilted before adding more. Stir in yoghurt (or non-dairy substitute) and kosher salt.
